In May 2013 while staying in Jacksonville Beach, I drove 88 miles one way to St. Simons Island Georgia to eat at a BBQ restaurant featured on Food Networks 'Diners, Drive-Ins, and Dives'. That restaurant was Southern Soul. A really cool place located in a 1940's gas station. Now I figured the food was going to be good, but with the people lining up on a Thursday for it to open, I knew the food was going to taste pretty special. And it was. But believe it or not what was really fantastic was the Carolina BBQ Sauce on the table. One dip of my pulled pork sandwich in it and I was surprised. Hooked. Or both. I couldn't believe a BBQ sauce could taste so good.
Carolina BBQ Sauce is a mustard based sauce, made with yellow mustard, brown sugar, spices, and a tad of apple cider vinegar. Well I mixed many different ingredients over and over. Many of the recipes tasted really bad. But after months of trial and error, I came upon what I believe is the right blend. And it's awful good. Just the perfect blend to make a sauce sweet, tangy, and spicy. They all work very well together. Also there are no artificial ingredients in this seasoning.
What makes creating Carolina BBQ Sauce a better idea rather than regular tomato based BBQ sauce? Very little competition. Where one type is loaded with brands, Carolina style is not. I have tasted several different brands of Carolina style BBQ sauce, and I'll be honest. Only one beats the taste of mine. And I'll never reveal the name. He-He.
